RECIPE OF THE WEEK: Chocolate glazed cappuccino chip muffins

Chocolate Glazed Cappuccino Chip Muffins
2 c. flour
3/4 c. sugar
2 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. milk
1/2 c. sour cream
2 Tbsp. instant coffee granules
1/2 c. butter or margarine, melted
1 egg, beaten
1 tsp. vanilla
3/4 c. mini chocolate chips

Mix flour, sugar, baking powder, cinnamon and salt in large bowl. Met butter, add coffee granules to milk, mix sour cream into milk mixture. Add butter, beaten egg and vanilla and mix well. Add to dry ingredients. Stir in chocolate chips. Put mixture into greased muffin tins. Bake at 375 degrees for 15 to 17 minutes. Mix glaze consisting of 1 cup powdered sugar, 1 to 2 tablespoons cocoa, and 2 table spoons milk. Swirl on top of muffins. Sprinkle tops with mini chocolate chips.
